Cauliflower Fried "Rice"

I love this simple fried "rice" made with cauliflower. I can throw this together in minutes thanks to frozen cauliflower rice and vegetables. This has become my go-to "I have nothing planned for dinner" meal during the week.

Ingredients

Instructions
  1. Heat olive oil in large skillet on medium high
  2. Add garlic and ginger and heat until fragrant (about one minute)
  3. Add frozen veggies and cauliflower rice and heat until tender, stirring occasionally (about 10 minutes)
  4. While the veggies are cooking, whisk the eggs and scramble them in a separate pan
  5. Once the veggies are tender, add in coconut aminos and mushrooms and continue to cook until liquid has been absorbed (about 5 minutes)
  6. Stir in scrambled eggs and serve
  7. Optional (but highly recommended!) toppings: red pepper flakes, sesame oil, and kimchi
