So, I have a health coach confession: I love to cook but I don’t really love creating my own recipes. It’s probably the rule follower part of me but following recipes is much more my style.


Here are some of my favorite {healthy} recipes:

Crockpot Thai Beef Stew  (Against All Grain) – This beef stew is the perfect cold-weather meal. It is spicy and features one of my favorite foods that I don’t see in many recipes – jicama.

Creamy Pesto “Pasta” with Spring Vegetables (Against All Grain) – This might be my favorite meal – ever. It is so creamy and the perfect balance of richness, salt, and crunch.

Leftover Roast Chicken Soup with Roasted Vegetables (Against All Grain) – I love making this soup on a cold day. Seriously, what smells better than roasting vegetables and chicken?

Honey Balsamic Chicken (Megan McGrane) – I am not a huge fan of chicken. In fact this is the only chicken I make (other than picking up an organic rotisserie chicken from Whole Foods). It is so simple and so, so, so good. It’s also great leftover on a salad.

Butternut Squash Stew with Pork and Spinach (Sustainable Dish) – This is one hearty stew. I love the combination of ground pork and butternut squash.

Pulled Pork (Me!) – Okay, so this is one of my {very simple} recipes. I love this pulled pork. I use a pork loin roast instead of a pork butt because I prefer a less fatty pulled pork.

Gluten-Free Chocolate Chip Cookies (Healthy Crush) – OMG. These are the easiest and most amazing chocolate chip cookies. They never last long in my house.

Brain Booster Smoothie (Kris Carr) – I make a version of this smoothie almost daily. I use spinach instead of kale because I don’t love kale in my smoothies. The walnuts add a delicious creaminess when they blend. I add cacao because…chocolate.
