This week after a long and snowy commute I was craving a meal that would feel like a warm hug.  I tend to be a recipe follower but felt inspired, got in my kitchen and just followed my stomach to create a delicious, easy, and nourishing soup.  It’s full of veggies, warming spices, and probiotic-rich miso paste.  (And totally felt like a toasty warm hug!)

-2 cups organic vegetable stock
-1.5 cups water
-1 garlic clove, minced
-1 inch ginger, minced
-2 cups baby bok choy
-1 cup mushrooms, sliced (I used organic white button mushrooms because that’s what I had)
-2 cups kale, chopped
-2 cups roasted cauliflower
-1 teaspoon red pepper flakes
-1 tablespoon miso paste
-Sesame oil
-Sriracha
-Handful of pea sprouts

Directions:
-Add stock and water to large stockpot and boil with minced garlic, ginger, and red pepper flakes
-Add bok choy, mushrooms, kale, and cauliflower, simmer until veggies are softened, and turn off the heat
-In a small bowl, stir together the miso paste with some of the warm soup liquid to dissolve the paste
-Mix miso mixture back into soup
-Top each bowl with a handful of raw pea sprouts, sesame seed oil, and sriracha
